There's one thing we love more than a classic Mexican meal—A lactose-friendly classic Mexican meal! Chicken enchiladas bring the whole family to the table. This lactose-friendly rendition adds a nice kick of flavour with our Hot Chili Havarti goat cheese.
Goat Cheese In This Recipe
1 sweet bell pepper, diced
1 onion, sliced
2 cups cooked chicken, sliced
1 clove garlic, minced
1 tbsp chili powder
1 tbsp lemon juice
½ tsp cumin
10 medium tortillas
2 cans tomato soup
1 can of salsa
1 cup Great Lakes Goat Dairy Hot Chili Havarti
Fry peppers and onions. Add garlic and chicken. Add chili powder, lemon juice, and cumin.
Spread tomato soup on the bottom of a 9x13 inch pan.
Place a spoonful of tomato soup and a spoonful of chicken mixture in each tortilla, until the mixture is evening divided.
Fold one end over and roll each tortilla.
Place in the 9x13 pan. Cover tortillas with salsa, and then sprinkle with cheese.
Cook at 400 degrees Fahrenheit for 20 – 30 minutes.
