Mozzarella Goat Cheese Pizza Quesadillas This is the perfect quick meal for you and your family that all the kids will love! The mozzarella adds the stringy cheese effect and holds the ingredients together. Fry them up and enjoy! Ingredients: 1 cup spaghetti sauce 2 tsp butter 4 tortillas 1 cup shredded mozzarella goat cheese 14 slices pepperoni 1/4 cup shredded parmesan cheese 1/2 tsp dried oregano OR other preferred pizza toppings Directions: 1. In a small saucepan, cook the spaghetti sauce over medium heat fro 3 minutes or until thoroughly heated. 2. Meanwhile spread butter over one side of each tortilla. Sprinkle the other side of the two tortillas with cheese, meat and sprinkle oregano. Top with other tortillas, butter on outside. 3. Cook on a griddle over medium- low heat fro 3 minutes on eat side or until cheese has fully melted. Cut into slices and serve with warmed spaghetti sauce.
