Ingredients:
2 red bell peppers, cut
1 medium yellow onion, chopped
1 1/2 tsp chili powder
1 1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp salt
4 large tortillas
2 cups brown rice, cooked
2 cups shredded marble cheese Goat Cheese
1 can black beans, drained and rinsed
1 cup romaine lettuce
2 avocados (optional)
Salsa (optional)
Hot sauce (optional)
Directions:
- In a large skillet, combine bell peppers, onions, chili powder, cumin, garlic powder, salt with 4 tsp of water and sauté over medium high heat until soft, about 6-8 minutes.
- Assemble tortillas with desired toppings; add about 1/4 cup rice, beans, peppers, cheese, avocado, salsa and roll together tightly.
- On the skillet, place seam of burrito down to seal and let cook until golden brown and repeat on opposite side.
- Remove from heat, cut and enjoy!
